Eggplant

Eggplant is a vegetable with a soft texture and slightly bitter taste, yet rich in fiber, antioxidants, and vitamins B1 and B6. Eggplants are very versatile in cooking, from being roasted, sautéed, to being the main ingredient in dishes such as ratatouille or Indonesian eggplant balado. Purple eggplant skin also contains anthocyanins, a powerful antioxidant that helps fight inflammation and maintain heart health.
